Executive Pastry Chef

Responsible to develop, along with Director of Culinary Operations Mah-Ze-Dahr Bakery and Executive Chef Gatsby, the pastry program for Mah-Ze-Dahr Bakery and Gatsby. Standardize recipes and presentations, train pastry staff, and ensure consistency of all pastry products. Recruit, hire, train and coach pastry team. P&L responsibility for bakery kitchen. Maintain standards of partnership with both broader Mah-Ze-Dahr Bakery and Knead Hospitality.

Primary Duties and Responsibilities, including but not limited to:
• Overall P&L responsibility for the bakery, with targets for food costs, labor costs and operation expenses; maintaining purchasing budget and labor budget within the pastry department
• Work closely with Gatsby Restaurant leadership team
• Develop and expand bakery team and production capabilities for future growth
• Production and inventory responsibility
• Creation, production, standardization of desserts, including creating a photographic document for dissemination to subordinate supervisors.
• Writing all pastry-related recipes and descriptions, updating as needed
• Establishing and maintaining pars, in collaboration with retail/Front of House, Gatsby Restaurant leadership and Mah-Ze-Dahr management
• Hiring, terminating, training and supervision of all pastry personnel
• Purchasing and maintaining pastry equipment and supplies
• Once additional locations are established, travel between locations under Chef’s purview to oversee, evaluate and ensure pastry consistency and department productivity
• Implement opening procedures for all locations
• Train and oversee staff at all bakery locations, as they become operational
• Source product and equipment in all locations.
Supervisory Responsibilities:
• Hold the Pastry team accountable for effectively open and close physical location/effectively set up & break down production while ensuring a clean, beautifully maintained Back of House
• Hold Culinary managers and kitchen employees accountable for effectively completing their positions’ specific job responsibilities according to Knead Hospitality + Design and Mah-Ze-Dahr Bakery’s service and hospitality standards
• Provide support, when necessary, to Gatsby Purchasing and Receiving managers with respect to vendor relations, ordering, receiving, and product sourcing
• Coordinate the development of new menus and testing of new recipes with other Culinary managers and Pastry team members
• Participate in regular meetings with department heads ensuring alignment with strategic business plans
• Ensure that all employees receive annual performance reviews
• Ensure rigorous knowledge of and adherence to all applicable laws, policies and procedures, including compliance with Dept of Health and Dept of Labor guidelines.

Qualifications and requirements

Experience required:
Extensive knowledge and experience in all aspects of pastry preparation including some degree of formal education in pastry techniques. At least four years as a Pastry Chef. At least eight years pastry experience in high-quality restaurants and food establishments, with a minimum of four years in a high-volume setting.
Language Skills:
Effective English verbal and written communication skills. Excellent organizational ability. Ability to effectively listen and administer instructions. Able to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers and employees of organization.
Mathematical Skills and Reasoning Ability:
Ability to calculate figures and amounts such as percentages, proportions and volume. Ability to apply concepts of basic algebra and geometry. Ability to solve practical problems and deal with a variety of variables in situations where only limited standardization exists. Ability to interpret a variety of instructions in written, oral or schedule form. Proper mental attitude to work under pressure and generate harmonious working environment.
Physical Demands:
While performing this job, the employee is regularly required to use hands to handle or feel; reach with arms and hands; and taste or smell. The employee is required to stand and move throughout the extended part of the workday. The employee must regularly lift and/or move up to 25 pounds and frequently lift and/or move up to 50 pounds. Close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
Work Environment:
While performing the duties of this job, the employee is regularly exposed to hot, wet and/or humid conditions. The noise level is usually moderate.
